Happy Monday! It is day 1 of my Whole30 journey, but technically I started last night with this delicious recipe we threw together last minute. Let me explain… I had been wanting to make kebabs for quite some time, and this weekend was the perfect time to give it a try. I love a quick and healthy meal. It was feeling awful summery in Auburn, so I grabbed some summer veggies at the grocery store as I prepared for my month long, whole foods only challenge.

Needless to say, my plan didn’t quite come to fruition. As I unloaded groceries and heard “when are you making dinner” from a certain husband of mine, the rain started. And not a quick shower; it was a full downpour. So we couldn’t grill the kebabs.

“It’s fine, we’ll just bake them”, I said, thinking on my feet. But no. I definitely forgot the skewers during my 1.5-hour grocery trip. So, this became a sheet pan meal instead, but it didn’t disappoint! We will definitely be making this again soon, though possibly with the skewers next time. I didn’t even miss the grilled texture because we broiled everything for a few minutes after baking. This is a super easy, Whole30, Paleo, and Gluten Free friendly, one-pan meal that can be made in just about 30 minutes.

For the sauce: this recipe. To make this recipe even quicker, you can use a Whole30 compliant chimichurri sauce from a grocery store, but this fantastic recipe is definitely easy and quick enough on its own.
