Happy Saturday, folks! I apologize for the late #hhtries52 post, but I’m excited to share my very favorite salad mix today! This tends to be a huge batch that we make either to bring to a dinner party or just as a large salad we can portion out throughout the week. This is filled with so many good things, but also with a lot of cheese, so you can cut the amount down or remove it if you’d like a healthier option. This is my favorite romaine mix, but you should be able to replace the romaine with your favorite type of lettuce. We especially love this simple, light, and lemony dressing which is super easy to throw together! Another way to customize this salad is to add your favorite protein on top! I especially love adding grilled chicken but, in a pinch, you can even chop up some sandwich meat and throw that in.
