Happy Saturday, folks! I apologize for the late #hhtries52 post, but I’m excited to share my very favorite salad mix today! This tends to be a huge batch that we make either to bring to a dinner party or just as a large salad we can portion out throughout the week. This is filled with so many good things, but also with a lot of cheese, so you can cut the amount down or remove it if you’d like a healthier option. This is my favorite romaine mix, but you should be able to replace the romaine with your favorite type of lettuce. We especially love this simple, light, and lemony dressing which is super easy to throw together! Another way to customize this salad is to add your favorite protein on top! I especially love adding grilled chicken┬ábut, in a pinch, you can even chop up some sandwich meat and throw that in.

Stanley Salad

Yield: 8


  • 1 12 oz bags of romaine lettuce
  • 1 bell pepper, diced (I prefer yellow)
  • 8 slices bacon, cooked and crumbled
  • 1/3 cucumber, diced
  • 1/2 cup diced onion
  • 1 cup diced tomato
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 1 cup croutons
  • Prepared protein of your choice
  • Dressing
  • juice of 1 lemon
  • 3/4 cup vegetable oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


  1. Cut and dice bell pepper, cucumber, onion, and tomato
  2. Combine romaine with diced veggies, bacon, mozzarella, parmesan, croutons, and protein
  3. Mix lemon juice, vegetable oil, minced garlic, salt and pepper and shake
  4. Shake dressing and chill
  5. Serve immediately or refrigerate. Top individual portions with dressing to keep whole from getting soggy.
